Carl Sacks, Senior Consultant, Certified Catering Consultants
Carl Sacks is a respected veteran hospitality industry executive. Sometimes described as the consummate catering industry insider, he has one of the longest track records of management success in this most competitive $10 billion sector. He is widely regarded as the top US expert on the business of catering, and is often cited as a source of insight and information on the industry by both general interest and trade publications. His columns on the catering trade have been published in Catersource magazine since 2004. He has also written feature articles for both Catersource magazine and Event Solutions Magazine. In 2010 his long form article on catering and multiculturalism was published in EHLITE, the magazine of the prestigious Ecole hoteliere de Lausanne in Switzerland. He has also been quoted or noted in Wall St. Journal, Crain’s NY, New Yorker Magazine, Restaurant Business Magazine and other publications on various catering topics. Carl has taught advanced seminars at Catersource Conference and Trade Show every year since 2001, and in 2012 he presented a master class for the European Party Caterers Association at their conference in Maastricht Holland. His seminar series on catering presented jointly with Catersource founder Michael Roman drew crowds in 18 markets in the US and Canada in 2009. During the course of his career, Carl has the unique distinction in the off premise catering industry of having held senior management positions at several of the largest caterers in the US. He spent seven years as General Manager and Executive VP of Great Performances Inc. of New York City, one of the nation’s largest off premise caterers. Previously, Carl was Vice President and Director of Catering at Hospitality Inc., of San Diego, one of the largest caterers in California. Before that he was Vice President and General Manager of Bensons Catering, then a major caterer in the Cincinnati region. As a consultant he was for two years acting COO of The Catered Affair in Boston MA, a large and very highly regarded regional caterer, and for three years he was the Director of Strategic Planning for Neuman’s Kitchen, a prominent NYC caterer. Carl also acts as a point of contact for many groups of caterers around the world. As the founder and Executive Director of Leading Caterers of America (LCA), he oversees an affinity group of nearly sixty of the largest caterers in the US and Canada. He is the conduit between the caterers of LCA and those of a similar group in Europe, the European Party Caterers Association (EPCAS) as well as with a group of caterers in Russia. He also facilitates contacts with individual caterers in other parts of the world, including Africa, South and Latin America, and East Asia. Working as a consultant to the industry since 2002, and as the founder of Certified Catering Consultants LLC, Carl typically works with several dozen caterers in any given year. His particular areas of expertise are financial and operating results, strategic planning, and management structure. He also works with caterers to maximize the value of their businesses, develop exit strategies, and secure venue contracts. As a venues expert Carl has worked both for caterers seeking venue contracts and for venues seeking to upgrade their foodservice and catering programs.
