Duce Raymond, Managing Partner & Director of Culinary, Sweet Baby Ray's Catering
Chef Duce Raymond grew up in and around the culinary world, where he learned at an early age that sharing food and drink with friends and family creates lifelong memories. At the age of 14, Duce began working alongside his father in their family-owned restaurants. Early in his professional culinary career, Duce worked with his Uncle Dave (Sweet Baby Ray) Raymond, whose success is founded “doing the right things for the right reasons”. Dave and Duce share a long-held belief in the barbecue community that “good things happen when people come together around a common purpose.” Duce derived immense insight from his uncle’s business and their barbecue fellowship – his passion and commitment to the world of barbecue are unquestioned (he has won over 70 local, regional and national awards and is a KCBS Competition Cook and Certified Judge). Yet, barbecue is just a portion of what makes Duce’s culinary vision extraordinary. After graduating with honors and receiving a Bachelor’s degree from Chicago’s prestigious culinary school, Kendall College, Duce helped open multiple restaurants, foodservice and catering operations, including the restaurants at Greenwood Hills Country Club, Marriott hotels, Heaven On Seven and Sweet Baby Ray’s restaurants. As Managing Partner of SBR Events Group, which encompasses three award winning brands, True Cuisine, Meetinghouse and Sweet Baby Ray’s catering, Duce has taken on ownership and management responsibilities while also helming the group’s scratch kitchen. He and his team have created masterful menus for everything from backyard-style barbecues for large corporations, to weddings and elegant events at venues like Chicago’s Goodman Theatre, Bridgeport Art Center, Salvage One and Danada House. Throughout his career, Duce has participated in numerous culinary demonstrations, including appearances at Kendall College and the National Association for Catering and Events (NACE) Culinary Extravaganza, Chicago Gourmet, WGN, ABC, CBS-TV and more. He has also appeared on the 2017 season of Cooking Channel’s Big, Bad BBQ Brawl. In his free time, Duce and his competition barbecue team, Duce’s Wild, enter some of the country’s most prestigious barbecue competitions – and usually take home a trophy (or two). Duce also donates his time to the communities in which he lives and works, and serves as Chairman of the National Barbecue & Grilling Association’s Restaurant and Catering Special Interest Group. Most near and dear to Duce’s heart is his family. He and his wife Sarah share many interests – they met at culinary school and enjoy cooking together. Duce is enthusiastically involved in the lives of his three daughters, Madeline, Emma and Lauren.
