How do you make the movement toward sustainable and environmentally-responsible practices when serving 300 people at an event, but the menu must be planned a year out? What might you say to your client in the middle of a cold, cold winter when they ask for food sourced locally, but “I really want a fresh tomato salad for the first course.” As members of the hospitality industry, we have a responsibility to do what we can to promote the sustainability of our food systems and environment. The team from Daniel et Daniel will discuss practices you can put into place in your kitchens, event spaces, and offices. Learn buzzwords you can teach your sales team in order to promote sustainability. If we all work together, sustainable will most definitely be attainable!
